I have in my yard a really steep hill. It is difficult to mow and also there is some erosion,even though there is grass there. I want to plant some ornamentals there instead of grass to see if that will help with the erosion, and also so I don't have to mow it. Any suggestions on something that will look fabulous, control the erosion, and be low-maintenance ?

You can plant some low foliage plants. Look up some beautiful foliage plants here: http://www.mooseyscountrygarden.com/foliage-plants/foliage-plants.html

Or you can plant a group of several varieties of caladium on the hill. It would look stunning.
