Grilled Shrimp Pineapple Kabob  submitted by ccalawerts
A tender and tastey grilled shrimp an pineapple with a bit of a kick. This is sure to be a hit at your next outdoor party!

Ingredients: 32 Large Shrimp 1/4 Cup Fresh Squeezed Lime Juice 1/4 Cup Fresh Squeezed Lemon Juice 1/2 Cup Extra Virgin Olive Oil 2 Cloves Minced Garlic 2 Tsp Chopped Parsley 1 Tblsp Lemon Zest Pinch Cayenne Pepper Pinch Black Pepper 2 Tblsp Dijon Mustard 1 Fresh Pineapple
 
Prep Time:   20 minutes
  
Instructions: Peel and devein Shrimp. Leave tails on and place in a platic zip lock bag. Combine remaining ingredients in a bowl and mix thoroughly. Pour ingredients over shrimp, secure bag tightly and place in refrigerator for 20 minutes. Cut Pineaple into cubes. Remove schrimp from bag and save the marinade. Thread 4 shrimp onto each metal skewers or soaked wooden skewers placing a cube of pineapple between each shrimp. Grill shrimp over medium coals and brush several times with marinade. Grill for 2 minutes on each side or until shrimp is pink and firm to touch.
 
Cook Time:   2 minutes on each side
